It’s been a while since I baked, but after tasting some delicious banana mini muffins recently, I knew it was about time I took a stab at another recipe!
I used this recipe from Waitrose, but on advice from a friend substituted the brazil nuts for walntus, and they turned out to be totally tasty!
Personally, I think they would have worked just well without the buttercream – losing that sweet topping would leave you with a really great muffin.
The texture from the chopped walnuts really gives you something to get your teeth into, and the flashes of banana that come through definitely enhance the flavour! A great alternative to traditional cupcake flavours!
